In the company of one of Mexico’s finest modern winemakers Aaron Huertas, you will discover and taste wines from the historic Guanajuato region.
The state of Guanajuato, where the Tres Raices a Bajío vineyard is located, is said to have been the first place in the Americas where the European vine (Vitis Vinifera) was cultivated to produce wine grapes, encouraged by Catholic priests, local winemakers, and the revolutionary Miguel Hidalgo. The region comprising parts of Guanajuato, Querétaro, Jalisco, Zacatecas, San Luis Potosí and Aguascalientes, actually has a long culinary and wine history dating back to the first Spanish colonization. Over the past 13 years, vineyards and restaurants have developed in what is commonly known as Mexico’s breadbasket, El Bajío.
It was in 2012 that the first vines were planted in Tres Raices and the hotel project began. In 2016, the vines produced fruit for the first vintage, and construction of the main building began. In October 2018, the vineyard opened its doors to the public, and the first harvest of wines was ready to be consumed and marketed. The vineyard also has a farm-to-table concept restaurant, surrounded by over 60 hectares of vineyards, where they offer tastings and tours.
